  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice

Method
 

  1. Place chicken breasts between two sheets of plastic wrap or parchment paper.
  2. Use a meat mallet or rolling pin to flatten each breast to an even thickness.
  3. In a bowl, mix olive oil, salt, black pepper, garlic powder, smoked paprika, and lemon juice to create a marinade.
  4. Coat chicken breasts in the marinade. If possible, let them marinate for 30 minutes.
  5. Preheat grill to medium-high heat (approx. 400°F/205°C).
  6. Clean grill grates with a grill brush to remove debris and previous residue.
  7. Place chicken on the grill and close the lid.
  8. Grill chicken for 5 to 6 minutes per side, flipping once. Total grill time should be 10 to 12 minutes.
  9. Use a meat thermometer to confirm internal temperature has reached 165°F (74°C).
  10. Remove chicken from grill and let rest under foil for 5 minutes before serving.

Notes

For added flavor, try zesting your lemon before juicing, or include fresh herbs like thyme or rosemary in the marinade. Brush chicken with honey during the last minute of grilling for a sweet glaze.
