- Preheat the oven to 375°F (190°C).
- In a small bowl, combine breadcrumbs and milk, then let sit for a few minutes to soften.
- In a large bowl, combine ground beef, ground pork, soaked breadcrumbs, grated onion, minced garlic, eggs, Worcestershire sauce, salt, black pepper, and thyme.
- Mix the meat mixture gently with your hands until just combined.
- Line a baking sheet with parchment paper and shape the meat mixture into an even loaf about 8 inches long.
- In a separate bowl, mix together ketchup, brown sugar, apple cider vinegar, and Dijon mustard to make the glaze.
- Brush half of the glaze over the shaped meatloaf.
- Bake the meatloaf in the preheated oven for 40 minutes.
- After 40 minutes, brush the remaining glaze over the meatloaf and continue baking for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For best flavor and texture, use fresh breadcrumbs and avoid overmixing the meat. Let the meatloaf rest before slicing to retain juices.
