Homemade Quiche

This versatile and cheesy homemade quiche is perfect for using up leftover veggies, meat, and cheese. Easy to make with a flaky crust and customizable filling, it's ideal for any meal of the day.

Ingredients
  

Crust
  • 1 ¼ cups all purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cut into cubes
  • 3 to 4 tablespoons ice water
Filling
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 cup shredded cheese cheddar, Swiss, Gruyere
  • Salt and pepper to taste
  • 1 cup extras sautéed veggies, cooked bacon, mushrooms

Method
 

  1. Mix the flour and salt in a bowl. Add the cold butter and rub it in with your fingers until it resembles coarse crumbs.
  2. Add ice water gradually until the dough forms. Do not overwork or let it get sticky. Flatten into a disk, wrap in plastic, and chill for 30 minutes.
  3. Roll out the chilled dough on a floured surface until it fits your pie pan. Press it gently into the pan.
  4. Prick the bottom of the crust with a fork. Line with parchment paper and fill with baking weights or beans. Bake at 375°F (190°C) for 15 minutes, then remove weights and bake for 5 more minutes.
  5. Whisk eggs, milk, and cream together in a bowl. Season with salt and pepper. Stir in shredded cheese and your selected fillings.
  6. Pour the filling into the pre-baked crust. Bake at 375°F (190°C) for 35 to 45 minutes, or until the center is just set and the top is lightly golden.

Notes

Let the quiche cool slightly before slicing for clean, firm pieces. It can be eaten warm or chilled, and is perfect to make ahead for busy days or special brunches.
