- Divide the ground beef into four equal portions. Gently roll each into a ball, then flatten into a patty slightly larger than the buns. Season both sides with salt and pepper.
- Preheat a skillet or grill over high heat until very hot. A cast iron skillet is ideal.
- Place the patties on the hot surface and cook for about 3 minutes without pressing down.
- Flip the patties and immediately add a slice of cheese on each one. Cook for another 2 to 4 minutes, depending on desired doneness.
- Spread butter on the cut sides of the buns and toast them in a pan or under the broiler until golden, about 1 to 2 minutes.
- Assemble each burger by placing the bottom bun first, then adding condiments, the cheesy patty, and desired toppings like lettuce, tomato, red onion, pickles, and bacon. Top with the upper bun.
Notes
Use high-fat ground beef for the juiciest patties, and avoid overworking the meat to maintain tenderness. Toasting the buns helps prevent sogginess, and adding a variety of toppings lets you customize each burger to your taste. Cover the skillet when adding cheese for better melting.
