- Pat the shrimp dry with paper towels and season with salt and pepper.
- In a large skillet, heat 4 tablespoons of butter and 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and stir for 1 minute until fragrant.
- Add the seasoned shrimp in a single layer and cook for 2 minutes per side, or until pink and opaque.
- Pour in the 1/4 cup of white wine (or chicken broth) and 1 tablespoon of lemon juice, scraping any bits from the pan.
- Simmer the sauce for 2–3 minutes, allowing the flavors to blend.
- Taste and adjust seasoning with extra salt, pepper, or crushed red pepper flakes as needed.
- Stir in chopped parsley and turn off the heat.
- Serve the shrimp scampi over cooked pasta, rice, or with crusty bread to enjoy the sauce.
Notes
For best flavor, use fresh garlic and avoid overcooking the shrimp. To brighten the dish, add extra lemon juice or white wine at the end. Customize with grated parmesan, spinach, or cherry tomatoes if desired.
