- In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, beat the egg, then add milk, melted butter, and vanilla extract. Stir to combine.
- Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be slightly lumpy.
- Heat a nonstick pan or griddle over medium heat. Add a small amount of butter or oil to the surface.
- Pour 1/4 cup of batter onto the pan for each pancake. Cook for 2–3 minutes, or until bubbles form on the surface and edges look set.
- Flip the pancakes and cook for another 1–2 minutes until the second side is golden brown.
- Remove from heat and repeat with remaining batter. Serve warm with your favorite toppings.
Notes
Do not overmix the batter—lumps help create fluffy pancakes. Use fresh baking powder for best results. Let the batter rest for 5 minutes before cooking for even fluffier pancakes. Toppings such as maple syrup, fruits, nuts, or whipped cream can enhance the flavor.
