  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar optional for a touch of sweetness
  • 1 stick unsalted butter cold and cut into cubes
  • 3/4 cup whole milk cold from the fridge

Method
 

  1. Preheat your oven to 450°F. Line a baking sheet with parchment paper or leave unlined.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugar using a fork or whisk.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the cold milk and stir with a wooden spoon just until the dough comes together.
  5. Turn the dough onto a floured surface and gently pat it into a 1-inch thick mound.
  6. Fold the dough over itself three times to create layers.
  7. Gently press the dough back to 1-inch thickness and cut out rounds using a biscuit cutter or glass without twisting.
  8. Place biscuits on the baking sheet with sides just touching or slightly apart for more crust.
  9. Bake in the preheated oven for 12 to 15 minutes, until tops are golden brown.
  10. Optional: Brush the tops with melted butter after baking for extra flavor.

Notes

Use cold ingredients to ensure flaky layers. Avoid overmixing the dough. To customize, add up to 1/2 cup of mix-ins like shredded cheese, herbs, or crumbled bacon. Store leftovers in an airtight container at room temperature for up to 2 days or freeze unbaked biscuits and bake from frozen.
