- Put all the ingredients into a blender and mix until smooth. If you don't have a blender, use a whisk until the batter is well combined.
- Let the batter rest in the fridge for at least 30 minutes to improve texture.
- Heat a nonstick skillet or crepe pan over medium heat and add a small amount of butter.
- Pour just enough batter into the pan to cover the surface evenly, swirling to coat.
- Cook for about 90 seconds until the edges are slightly crisp, then flip and cook for another 30 seconds.
- Transfer to a plate and repeat with remaining batter, adding butter to the pan as needed.
- Fill finished crepes with your choice of ingredients, such as Nutella and strawberries, ham and cheese, or fruit and whipped cream.
Notes
Letting the batter rest is key for smooth crepes. Use a ladle for portioning and consider using clarified butter for crisper edges. For sweet crepes, a splash of rum can enhance flavor. Store leftover crepes stacked with wax paper and covered in an airtight container. Reheat in the microwave for 15 seconds or in a pan over medium heat.
