Ingredients

Main
  • 1 pound ground beef 85 percent lean works great
  • 1 packet taco seasoning or your own mix if you feel fancy
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • Small flour or corn tortillas
  • Chopped lettuce
  • Diced tomatoes
  • Shredded cheddar cheese
  • Sour cream
  • Sliced avocado optional but highly recommended
  • Hot sauce lime wedges, cilantro, anything that makes you smile

Method

  1. Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, for 6 to 8 minutes until fully browned. Drain excess grease if needed.
  2. Sprinkle in the taco seasoning and add the tomato paste to the skillet. Pour in 1/2 cup water. Stir everything together and let simmer for 5 minutes until the mixture thickens and coats the meat evenly.
  3. Warm the tortillas in a clean skillet for 30 seconds on each side, or microwave wrapped in a paper towel for 15 seconds until soft.
  4. Spoon seasoned beef into the warm tortillas. Top with chopped lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and sliced avocado. Add hot sauce, lime wedges, and cilantro if desired.
  5. Serve immediately and enjoy your tacos hot.

Notes

Leftover beef can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 2 months. Reheat gently in a skillet or microwave before serving.
