- Slice the flank steak very thin against the grain. Mix with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Let it marinate while preparing the other ingredients.
- In a small bowl, mix the remaining 1 tablespoon soy sauce, 1 tablespoon oyster sauce, remaining 1 teaspoon cornstarch, 1 tablespoon brown sugar, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 2 tablespoons water, and a pinch of black pepper to make the sauce.
- Bring a small pot of water to a boil. Blanch the broccoli for 1 minute, then drain and run under cold water to preserve its color and texture.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer. Cook for 2 minutes until browned, flip, and cook another 1 minute. Remove and set aside.
- In the same pan, add a little more oil if necessary. Add minced garlic and grated ginger. Stir for about 30 seconds until fragrant.
- Add the blanched broccoli and cooked beef back into the pan. Pour the prepared sauce over everything and stir over medium heat for 2 to 3 minutes until the sauce thickens and everything is well coated.
Notes
Thinly slicing the beef and briefly marinating it helps keep it tender. Using fresh broccoli ensures a vibrant color and texture. Serve it with steamed rice or noodles for a complete meal. Leftovers keep well and taste even better the next day.
