  • 1 pound flank steak cut thinly across the grain
  • 3 cups broccoli florets fresh, not frozen
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons cornstarch
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 3 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons water

Method
 

  1. Slice the flank steak very thin against the grain. Mix with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Let it marinate while preparing the other ingredients.
  2. In a small bowl, mix the remaining 1 tablespoon soy sauce, 1 tablespoon oyster sauce, remaining 1 teaspoon cornstarch, 1 tablespoon brown sugar, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 2 tablespoons water, and a pinch of black pepper to make the sauce.
  3. Bring a small pot of water to a boil. Blanch the broccoli for 1 minute, then drain and run under cold water to preserve its color and texture.
  4. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer. Cook for 2 minutes until browned, flip, and cook another 1 minute. Remove and set aside.
  5. In the same pan, add a little more oil if necessary. Add minced garlic and grated ginger. Stir for about 30 seconds until fragrant.
  6. Add the blanched broccoli and cooked beef back into the pan. Pour the prepared sauce over everything and stir over medium heat for 2 to 3 minutes until the sauce thickens and everything is well coated.

Notes

Thinly slicing the beef and briefly marinating it helps keep it tender. Using fresh broccoli ensures a vibrant color and texture. Serve it with steamed rice or noodles for a complete meal. Leftovers keep well and taste even better the next day.
