  • 4 slices of thick day-old bread Brioche or Challah work best
  • 3 large eggs
  • 3/4 cup whole milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter for the pan

Method
 

  1. In a large bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until completely combined with no lumps.
  2. Dip each slice of bread into the egg mixture for about 20 seconds per side, making sure it is coated but not overly soaked.
  3. Heat a skillet over medium heat and melt 1 tablespoon of butter until it sizzles gently without burning.
  4. Place a soaked slice of bread onto the hot skillet and cook for 3 to 4 minutes per side, turning once, until golden brown and crispy on the outside.
  5. Add more butter to the skillet if it becomes dry, and continue cooking the remaining slices.
  6. Serve hot with maple syrup and powdered sugar, or your favorite toppings.

Notes

Use thick, day-old bread like brioche or challah for the best texture. Keep extra slices warm in a 200°F oven while cooking batches. You can also freeze leftovers and reheat in a toaster for quick mornings. Try adding orange zest to the custard for a flavor boost.
