Servings: 4 servings

Ingredients

Main
  • 2 cups all purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 and 3/4 cups milk whole milk works best
  • 1/2 cup melted butter unsalted
  • 1 teaspoon vanilla extract

Method

  1. Preheat your waffle iron until hot to ensure crisp edges.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then stir in milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix; a few lumps are okay.
  5. Let the batter rest for 5 to 10 minutes to help the waffles rise better.
  6. Lightly oil the waffle iron before using to prevent sticking.
  7. Pour about 1/2 to 3/4 cup of batter into the center of the waffle iron depending on its size.
  8. Close the lid and cook for 4 to 5 minutes or until the waffle is golden brown and crisp.
  9. Remove the waffle and place it on a wire rack to keep it crisp.
  10. Serve immediately or keep warm in a 200°F oven if making multiple batches.

Notes

Letting the batter rest enhances texture. Avoid overmixing to keep waffles light. To store, freeze cooled waffles in a bag for up to two months. Reheat in toaster or oven, not microwave.
