Method
- Preheat your waffle iron until hot to ensure crisp edges.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then stir in milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix; a few lumps are okay.
- Let the batter rest for 5 to 10 minutes to help the waffles rise better.
- Lightly oil the waffle iron before using to prevent sticking.
- Pour about 1/2 to 3/4 cup of batter into the center of the waffle iron depending on its size.
- Close the lid and cook for 4 to 5 minutes or until the waffle is golden brown and crisp.
- Remove the waffle and place it on a wire rack to keep it crisp.
- Serve immediately or keep warm in a 200°F oven if making multiple batches.
Notes
Letting the batter rest enhances texture. Avoid overmixing to keep waffles light. To store, freeze cooled waffles in a bag for up to two months. Reheat in toaster or oven, not microwave.
