Creamy Alfredo Sauce

  • 1 cup heavy cream
  • 1 stick unsalted butter cut into chunks
  • 1 cup grated Parmesan freshly grated
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • Pasta of your choice Fettuccine is the classic

Method
 

  1. Bring a large pot of salted water to a rolling boil. Cook pasta until al dente, then drain and reserve 1 cup of pasta water.
  2. In a large pan over medium heat, melt the butter until it just begins to bubble. Do not let it brown.
  3. Add minced garlic and stir for about 30 seconds until fragrant.
  4. Slowly pour in the heavy cream and stir for about 5 minutes until it begins to thicken slightly.
  5. Add the Parmesan cheese and whisk until the sauce is smooth and creamy.
  6. Taste the sauce and season with salt and black pepper as desired.
  7. Add the cooked pasta to the sauce and toss gently to coat. For a thinner consistency, add reserved pasta water a little at a time until desired texture is reached.

Notes

For best results, keep the heat low during cooking to prevent the cheese from clumping. Use freshly grated Parmesan for a smoother melt and richer flavor. The sauce is best enjoyed immediately after preparation. Optional add-ins include cooked chicken, sautéed mushrooms, or greens like spinach or broccoli.
