- In a small jar or bowl, add 3 tablespoons chia seeds, 1 cup milk, 1 to 2 teaspoons sweetener, and 1/2 teaspoon vanilla extract if using. Stir thoroughly to combine and prevent clumping.
- Place the jar or bowl in the refrigerator. After 5 minutes, remove and stir again to redistribute seeds and prevent clumping.
- Refrigerate for at least 2 hours or overnight until the mixture reaches a pudding-like consistency.
- Before serving, check the consistency. For a thicker pudding, stir in more chia seeds and wait 30 minutes. For a thinner pudding, add a splash of milk and stir.
- Top with your favorite toppings such as berries, nuts, granola, or banana slices before serving.
